Although most San Franciscans have heard of Boudin, they don’t know the incredible story behind their "Mother Dough"—the living-yeast starter that gives every loaf of their bread its unique sour flavor and texture. Their mother dough has been doubling continuously since 1849! In fact, the histories of Boudin and San Francisco are so intertwined, you simply can’t tell one story without the other.
